Why Gluten Free and Lactose free?

I got extremely sick when I was about to turn 22 and it was from milk, and gluten just caused me a bunch of pain since 24.
as you can imagine pain sucks, so I changed my diet.

It is common for people to develop these sensitivities in their early to mid twenties, so if you're reading this good luck!

Section 2

if you so happen to be gluten and lactose intollerant, then you have probably discovered the wonders of rice and oats!

Now if you looked it up you would find out that both oats and rice have gluten in them!

The reason for rice and oat gluten being okay and wheat, barley, rye, malt and triticale not being okay is due to the gluten protein chain.

rice and oat's protein chain does not have the tail that the other glutens have and it's this protein tail that people react to!

Section 3

Now in the world of gluten free you can still get bread, pizza and such but the quality is what will change!

lactose free cheese can be very slimey often and gluten free bread ranges from dry to a dessert seeming moist in comparison.

my recommendation is to buy a rice cooker and invest in different bags of rice!

the reason for these rices is that between them all they have different texture and moisture contents which helps feel like variety in your mouth! Especially Calrose a form of short grain californian rice that's very close to sushi rice and I adore it!
